Position Overview
Reporting directly to the Executive Chef, the Sous Chef, Operations assists in designing and preparing delicious Asian cuisine tailored for airline customers. This role requires experience in Asian culinary profiles, culinary leadership, and a commitment to quality, safety, and sanitation standards.

Main Duties & Responsibilities 📝
- Food & Labor Compliance: Ensure food specifications and labor objectives meet company and customer standards.
- Supervision & Quality Control: Oversee department operations, ensuring items are produced, dated, and coded correctly per regulations (FDA, USDA, HACCP).
- Team Management: Set up shift schedules, assign tasks, and supervise staff, including Food Supervisors.
- Inventory & Production: Order raw materials, prepare daily production sheets, and handle last-minute meal requests.
- Training & Safety: Train employees on proper procedures, maintain cleanliness, and adhere to safety protocols.
- Food Quality & Consistency: Manage hot and cold kitchen production for quality assurance.
- Labor & Cost Management: Monitor manpower planning, schedule staff, and reduce turnover rates.
- Employee Relations & Compliance: Conduct coaching, counseling, and ensure payroll accuracy within union agreements.
- Training & Certifications: Complete all required company training, including ServSafe certification.
Qualifications & Skills 🎓⚙️
- Education: Associates degree in Culinary Arts or Culinary Certification preferred.
- Work Experience:
- 1-3 years as Chef or Sous Chef.
- Minimum 7 years cooking experience.
- Supervisory experience in high-volume food production or catering preferred.
- 3+ years Japanese cuisine, in-flight catering, or similar high-volume environment preferred.
- Skills: Ability to cook to specifications, strong leadership, effective training, time management, organizational, and communication skills.
- Technical: ServSafe certification preferred; basic computer skills and familiarity with MS Office.
- Languages: Excellent communication skills; bilingual in Spanish a plus.
Job Environment & Logistics 🌍🛫
- Location: USA
- Type: Full-Time, Exempt
- Work Conditions: Standing, bending, lifting (up to 25 lbs), noise, temperature fluctuations.
- Schedule: Rotating over 55 hours/week typical.
- Team Size: Up to 40 direct reports, varies by unit.
