  • Work Setting: On-Site at our chef's facility near IAH - George Bush Intercontinental Airport
  • Work Schedule: 5 consecutive days on, 2 days off; flexible with early mornings, evenings, weekends, and holidays
  • Operations: 24/7, year-round ⏰
  • Salary Range: $75,000.00 - $80,000.00 💰

Position Overview 🥢

As a Specialty Cuisine Sous Chef specializing in Japanese cuisine, you will craft authentic, scratch-made dishes that showcase regional flavors. Your role requires meticulous attention to detail and a passionate commitment to excellence, ensuring each meal meets airline specifications while maintaining the highest standards of safety, presentation, and quality. From preparation to plating, you’ll deliver in-flight dining experiences that are truly world-class.

Key Responsibilities 🍱

  • Meal Preparation: Prepare and cook complete authentic Japanese meals, including entrees, side dishes, sauces, and specialty items for assigned airline clients.
  • Recipe Execution: Follow authentic recipes with consistency, efficiency, and precision in portioning, seasoning, and presentation.
  • Plating & Presentation: Plate dishes according to menu standards, ensuring products are flight-ready, visually appealing, and securely packed.
  • Food Safety & Compliance: Adhere to airline, HACCP, and food safety regulations, including handling, labeling, and temperature control.
  • Coordination: Work with other kitchen stations to ensure timely production and delivery of complete meal components.
  • Cleanliness & Organization: Maintain a clean, organized workspace, equipment, and storage areas at all times.
  • Menu & Quality Innovation: Assist with menu presentations, recipe testing, seasonal offerings, and implementation of new airline menus.
  • Inventory & Waste Reduction: Monitor inventory levels, report shortages, and support waste reduction initiatives.

Required Skills & Experience 🌟

  • Experience: Minimum of 5 years in high-volume or specialty kitchens, focusing on authentic Japanese cuisine.
  • Language Skills: Basic understanding of Japanese (reading, writing, and conversational) for recipe comprehension and client communication.
  • Cooking Techniques: Proficient in authentic Japanese culinary techniques and regional dishes.
  • Attention to Detail: Strong focus on quality, timing, and adherence to plating guidelines and standards.
  • Food Safety: Knowledge of HACCP and sanitation standards.
  • Work Schedule: Ability to follow scheduled shifts and production timelines.
  • Educational Background: Culinary degree, formal training, internships, or equivalent on-the-job experience preferred.
  • Physical Requirements: Ability to stand for extended periods, lift up to 50 lbs, and work in hot/refrigerated environments as needed. 🚶‍♂️🍲
