Position Overview 🍽️
Bring authentic flavors to the skies! As a Specialty Cuisine Sous Chef focusing on Japanese cuisine, you'll craft scratch-made dishes that highlight regional authenticity for our airline partners. Precision and passion are key, ensuring each meal meets airline standards while maintaining top quality, safety, and presentation. From prep to plating, you'll create in-flight dining experiences that feel truly world-class.
Requirements & Work Environment 🌏
- Language Skills: Basic understanding of Japanese (reading, writing, conversational)
- Work Location: Onsite at Sky Chefs facility near George Bush Intercontinental Airport (IAH)
- Schedule: 5 consecutive workdays with 2 days off; flexible to work early mornings, evenings, weekends, and holidays
- Operations: 24/7, 365 days/year
Main Responsibilities 📋
- Prepare and cook authentic Japanese meals from scratch, including entrees, sides, sauces, and specialty items for designated airline clients.
- Follow detailed recipes, portioning, seasoning, and presentation standards to ensure consistency and quality.
- Plate dishes following menu specifications, ensuring they are visually appealing, flight-ready, and securely packaged.
- Adhere to all airline, HACCP, and food safety regulations, including proper handling, labeling, and temperature control.
- Coordinate with kitchen stations for timely production and delivery of meal components.
- Maintain cleanliness and organization of workstations, equipment, and storage areas during each shift.
- Support menu presentations, chef tables, recipe testing, and updates to airline menus or seasonal offerings.
- Monitor inventory levels, report shortages, and assist waste reduction initiatives.
Skills, Experience & Qualifications 🌟
- Minimum 5 years of professional cooking experience in high-volume or specialty kitchens, especially preparing authentic Japanese cuisine.
- Ability to read, write, and speak basic Japanese to understand recipes and communicate with clients.
- Previous airline catering experience is a plus but not required.
- Proficient in authentic Japanese cooking techniques and regional cuisine preparation.
- Ability to follow airline plating guides, recipes, and presentation standards.
- Strong attention to detail, quality, and timing to meet production deadlines.
- Knowledge of food safety standards (HACCP).
- Flexible to work scheduled shifts aligned with daily production needs.
- Culinary degree, formal training, internship, or on-the-job experience preferred.
- Comfortable working in a hot kitchen environment standing for extended periods and lifting up to 50 lbs, including hot pans.
- Ability to work in refrigerated spaces when required.
