Job Purpose
Manage the daily operations of the kitchen, ensuring guests receive high-quality food promptly by leading, motivating, and coaching the kitchen team to surpass guest expectations.
Key Responsibilities
- Operational Management: Oversee the kitchen’s daily activities efficiently and cost-effectively within budget.
- Resource Optimization: Monitor consumption and maximize the capacity of resources and equipment.
- Menu Development: Create monthly and seasonal menus collaboratively with the restaurant manager.
- Quality Control: Supervise the quality of dishes produced and maintain high culinary standards.
- Food Quality Goals: Set and monitor standards for food quality.
- Hygiene & Cleanliness: Ensure the kitchen and utensils are kept clean and hygienic at all times.
- Reporting: Prepare and present regular reports to management regarding kitchen operations.
- Administrative Oversight: Oversee administrative tasks related to kitchen management.
- Health & Safety: Continuously improve health and safety standards within the kitchen environment.
- Additional Duties: Perform any other duties assigned by management.
Competencies and Requirements
- Experience: Minimum of 10 years’ culinary management experience in a Japanese restaurant within a 4- to 5-star hotel.
- Knowledge/Certificates: Excellent product knowledge of 5-star Japanese cuisine.
- Education: Secondary school diploma or equivalent.
- Language Skills: Proficiency in English, Cantonese, and Mandarin.
- Computer Skills: Basic computer proficiency.
