Job Purpose

Manage the daily operations of the kitchen, ensuring guests receive high-quality food promptly by leading, motivating, and coaching the kitchen team to surpass guest expectations.

Key Responsibilities

  • Operational Management: Oversee the kitchen’s daily activities efficiently and cost-effectively within budget.
  • Resource Optimization: Monitor consumption and maximize the capacity of resources and equipment.
  • Menu Development: Create monthly and seasonal menus collaboratively with the restaurant manager.
  • Quality Control: Supervise the quality of dishes produced and maintain high culinary standards.
  • Food Quality Goals: Set and monitor standards for food quality.
  • Hygiene & Cleanliness: Ensure the kitchen and utensils are kept clean and hygienic at all times.
  • Reporting: Prepare and present regular reports to management regarding kitchen operations.
  • Administrative Oversight: Oversee administrative tasks related to kitchen management.
  • Health & Safety: Continuously improve health and safety standards within the kitchen environment.
  • Additional Duties: Perform any other duties assigned by management.

Competencies and Requirements

  • Experience: Minimum of 10 years’ culinary management experience in a Japanese restaurant within a 4- to 5-star hotel.
  • Knowledge/Certificates: Excellent product knowledge of 5-star Japanese cuisine.
  • Education: Secondary school diploma or equivalent.
  • Language Skills: Proficiency in English, Cantonese, and Mandarin.
  • Computer Skills: Basic computer proficiency.
