The following responsibilities outline the key duties required to maintain excellence in Italian culinary operations within the hotel.
Operational Responsibilities
- Ensure Compliance with Standards: Guarantee all company and brand standards for culinary operations—especially those related to Italian cuisine—are fully implemented and consistently upheld. 🇮🇹
- Collaborative Leadership: Work collaboratively with all team members in a supportive, flexible manner, always prioritizing the overall success of the hotel and guest satisfaction. 🤝
- Knowledge & Sourcing: Maintain in-depth knowledge of authentic Italian ingredients, artisanal products, regional specialties, and current market availability; source fresh and local ingredients whenever possible. 🛒
- Quality Control: Oversee and verify all incoming food products, ensuring quality, freshness, and alignment with order sheets and receiving standards. ✅
- Kitchen Coordination: Coordinate with satellite kitchens regarding mise-en-place, Italian specialty items, production schedules, and ingredient supply requirements. 🍽️
- Yield & Cost Management: Conduct regular yield tests to minimize wastage and ensure that all Italian recipes in Scala (or hotel recipe systems) are accurate, current, and cost-effective. 📊
- Portion Control: Lead and enforce proper food portioning standards to control costs without compromising quality or authenticity. 🍴
- Requisition Monitoring: Monitor section requirements closely and ensure timely, accurate requisitions of Italian food items based on menu needs and volume forecasts. 📝
- Food Preparation & Presentation: Observe food preparation, cooking methods, presentation standards, portion sizes, and garnishing techniques to ensure compliance with prescribed Italian culinary standards. 👨🍳
- Inventory & Purchasing: Estimate consumption of Italian food items and manage purchases or requisitions accordingly. 🛍️
