Join our team as an Executive Chef, Japanese Cuisine and play a key role in elevating airline catering experiences with culinary excellence!

About the Role

We’re seeking motivated, engaged professionals to help make every journey better through exceptional culinary services. Reporting directly to the General Manager, the Executive Chef will oversee daily food preparation, manage culinary staff, and ensure top-quality food services for our airline clients. ✈️🍣

Main Duties and Responsibilities

Operational Leadership & Quality Assurance

  • Achieve culinary operational goals by contributing to strategic planning, implementing action plans, and maintaining quality standards.
  • Serve as the culinary resource to operations managers, troubleshooting issues, completing audits, and driving system improvements.
  • Identify and resolve problems, implement change, and oversee food safety and sanitation compliance.

Financial Management & Menu Development

  • Meet financial objectives by estimating requirements and assisting with menu design.
  • Anticipate customer response to menus, schedule expenditures, analyze variances, and initiate corrective actions.
  • Evaluate and optimize menu presentation and food production processes for cost and efficiency.

Food Preparation & Quality Control

  • Oversee food prep by collaborating with team members, controlling portion sizes, and monitoring presentation quality.
  • Ensure recipes, portion specifications, and safety standards are strictly followed.
  • Manage ingredient procurement, inventory levels, and storage to ensure quality and cost-efficiency.

Equipment & Supplies Maintenance

  • Maintain culinary equipment through proper usage, troubleshooting, preventive maintenance, and evaluating new tools.
  • Ensure supplies are adequate and purchases are justified through administrative proposals.

Staff Development & Training

  • Recruit, train, and supervise kitchen staff, fostering professional growth and teamwork.
  • Monitor employee performance, provide coaching, counseling, and corrective actions as needed.
  • Ensure team compliance with HACCP, FDA, and safety regulations.

Reporting & Documentation

  • Prepare reports on food production, menu trends, and operational metrics.
  • Handle administrative tasks and contribute to continuous improvement initiatives.

Qualifications

  • Education: Associate or Bachelor’s Degree in Culinary Arts or related field, or at least 4 years of experience as an Executive Chef.
  • Work Experience: Minimum 10 years of culinary experience, with at least 4 in an executive role; previous high-volume, manufacturing, or airline catering experience preferred.
  • Skills & Certifications: Ability to cook to detailed specifications, effective leadership, team management, ServSafe certification preferred, bilingual in Japanese/English required.

Technical & Language Skills

  • Strong organizational, analytical, and communication skills.
  • Proficiency with menu design, Microsoft Office, and basic computer skills.
  • Exceptional time management and multitasking abilities.
  • Ability to give constructive feedback and foster a positive work environment.

Work Environment & Physical Requirements

  • Stand, bend, lift, and move intermittently during shifts exceeding 10 hours.
  • Ability to lift over 25 pounds, work in noisy, temperature-variable kitchens, and handle physical demands of the role.
  • Flexible rotating schedule, often exceeding 55 hours per week.
